An easy, flavorful variation on pasta carbonara. Great with grilled chicken or grilled pork chops.
Ingredients
- 1 box (8 oz) bow-tie pasta
- 1 tablespoon olive oil
- 1 small onion, finely chopped (about 3/4 cup)
- 1 cup heavy cream
- 1/3 cup chicken broth
- 1 tablespoon lemon juice
- 1 can (15 oz) Le Sueur® Very Young Small Sweet Peas, drained
- 1/2 cup shredded Parmesan cheese
- 1/4 cup crumbled cooked bacon
Instructions
- Cook pasta according to package directions; drain and keep warm.
- In 12-inch skillet, heat oil over medium-high heat until hot. Add onions and cook 3 minutes, stirring frequently, or until tender. Add cream and broth and heat to a boil. Reduce heat to low and simmer about 6 minutes or until slightly reduced, stirring occasionally. Stir in lemon juice.
- Gently fold in peas. Stir cream mixture, cheese and bacon into cooked pasta. Serve hot. Garnish with additional shredded Parmesan cheese or chopped fresh parsley, if desired.
